Vegan Christmas Log Recipe

During the Christmas season, one of our absolute favorite indulgences is the Maltese Christmas Log. As December approaches, people all around begin to prepare their own version of this delightful treat in anticipation of the festive days ahead.

Ingredients:

360g Morning Coffee Biscuits

200g Pitted Dates

100g Walnuts

100g Hazelnuts

150g Figs

450ml Almond Milk

1 tsp cinnamon

1 tsp ginger

1 tsp ground cloves

2 tbsp cacao

1 shot of Scotch/Irish Whiskey

17g Grated Vegan Chocolate

Melting Vegan Chocolate

 

Method:

First start by chopping the figs in small pieces, then roughly crush the morning coffee biscuits leaving some large bits, crush the walnuts and hazelnuts also leaving some large bits, add the chopped figs, cinnamon, ginger, ground cloves, grated vegan chocolate, cacao, and mix all these dry ingredients together. Put the almond milk on heat and chop the pitted dates in small bits and melt them in the almond milk while stirring. Once they are melted add the whiskey to the dry ingredients and add the melted dates and almond milk mix to the dry ingredients and mix everything together until everything comes together.

Once it cools down, put the mix in the foil, form the log, and refrigerate overnight.

Melt some vegan chocolate and cover the log.
